Basmati Rice is of the most perfumed and for this reason I like to cook it in way to exalt its taste with akin spices. Turmeric is sweet and flowery. A light dish, easy and fast to prepare that will let you taste the nice pairing of turmeric and basmati.

Ingredients (4 servings):he
400 gr of Basmati Rice
2 medium sized Zucchini
120 gr of Leek
Extra Virgin Olive Oil
1 glass of Soy Milk (or regular Milk)
4 tablespoons of Turmeric
Take a pot and pour some water on it. Let it boil and in the mean time wash and cut the leek in slices, put them into a pan with a bit of olive oil.
Wash the zucchini and cut them a la julienne with a grater. Put into the pan with leek and oil then cook over low flame. Let the vegetables saute, add soy milk and stir. Add the turmeric and salt and let cook until the vegetables are done.
Boil and drain rice and then add it to the obtained sauce. Mix and serve right away.
