Eggs & Peppers Savory Pie

I made this today and was literally devoured in less then 10 minutes by my family. Record! You can make it as an appetizer or for a rich dinner. Easy to prepare and you’ll get many compliments if you let you friends taste it.Try it and let me know in the comments below! PREPARATION: 1 h 30 m COOKING: 1 h DIFFICULTY: Easy Ingredients: 1 roll of Pie Crust (Pate Brisée) 1 Red Bell Pepper 1 Green Bell Pepper 6 Eggs 100 ml Heavy Cream 150 gr di grated Parmigiano Cheese 1/2 Leek Extra Virgin Olive Oil Parsley Salt Instructions: 1) Wash and clean the peppers and shred them in medium sized sticks. Chop the leek and saute in a non-sticking pan with extra virgin olive oil. 2) When the leek will begin soften we’ll add peppers. Let them fry for 1 or 2 minutes, then add a glass of water, put the stove on low heat and cover with a lid. Stir from time to time and when becomes dry add another glass of water. Cook until the pepper is half cooked. Salt to preference. 3) Let’s whisk 6 eggs in a bowl adding heavy cream, parmigiano cheese, salt and 2 spoons of chopped fresh parsley. 4) Heat the oven at 180° and unroll the pie crust dough into a backing pan. Lay cold peppers in the pan. 5) Pour the liquid compound that we’ve prepared before and fold the sides of dough as pictured. Cook it for 45 minutes and cut into squares when cold. Enjoy!
