Bittersweet Zucchini & Red Onions

This hot weather makes really hard to find a fresh side dish to be paired with meat. This recipe is super-easy and fast to prepare to obtain a unusual and tasty side dish. PREPARATION: 30 m COOKING: 10 m DIFFICULTY: Easy Ingredients: 4 Zucchini 1 e 1/2 Red Onion 1 lt Water 500 ml White Wine Vinegar 250 gr Sugar Extra Virgin Olive Oil Parsley Salt Instructions: 1) Wash and clean zucchini and cut it with a julienne cutter. Peel the onions and put all the vegetables in a bowl. 2) Put the water, vinegar and sugar in a pot and bring it to boiling point. Pour in the solution the zucchini and the onions and let boil, covered with a lid and on middle heat, no more than 10 minutes. 3) Drain the vegetables and put them in a bowl to cool off. Proceed by dressing with a good amount of extra virgin olive oil, a sprinkle of fresh parsley and a a little bit of salt.
